A hearty, slow-simmered beef stew loaded with root vegetables in a rich savory broth.
Sear beef cubes in batches in a large pot until browned on all sides. Set aside.
Saute onion, garlic and celery in the same pot until softened.
Stir in tomato paste, then return beef to the pot along with broth and bay leaves.
Bring to a boil, reduce heat, cover and simmer 1 hour.
Add carrots and potatoes and simmer 30 more minutes until beef and vegetables are tender.
Season to taste, remove bay leaves and serve hot.
